JOB SUMMARY:  This position is located in the Morale, Welfare and Recreation Department, Dewey’s, Naval Air Station Jacksonville, FL. The purpose of this position is to lead the Bingo Program, Catering Operations for River Cove and Food and Beverage for Dewey’s, CPO Club and T-bar, performing a variety of technical, administrative functions and tasks.

 

MAJOR DUTIES:
Incumbent serves as central point of contact for matters relating in day to day operation of the Bingo Program, Dewey’s, T-bar and Catering. Stays abreast of all planned functions including catered events, private parties etc that are scheduled. Incumbent will have oversight of menu planning for all meals to include parties, banquets, and other contracted functions. Ensures well-balanced meals are prepared, determines quantity of food to be procured on a monthly, weekly, and daily basis, and amounts to be cooked.

Solves problems that may arise with patrons or employees in a tactful and diplomatic manner. Handles routine day to day problems as they arise. In case of serious problems, contacts the MWR Director for guidance and assistance. Provides instruction and guidance to all staff members on functions taking place during their shifts. Works with bartenders, cooks, waiters/waitresses, rec-aids and others to ensure planned events take place as scheduled.

Establishes and enforces procedures and controls of food and equipment inventories.  Ensures proper bid procedures are being followed for all food and beverage purchases.  Responsible for monthly physical inventory of all food areas in Dewey’s, River Cove and the T-bar.

Ensures proper records are maintained.  Incumbent is responsible for end of shift processing, to include reading of the register and completing all necessary paperwork. Ensures that instructions pertaining to the security of funds are adhered to. Prepares and justifies annual budget for inclusion in the overall MWR operating budget. Maintains fees and charges to assure the program remains self-sufficient as required by instruction. Conducts daily accounting functions. Reviews and analyzes monthly profit or loss statement.

Develops and supervises safety, sanitation, and maintenance programs for all food and beverage equipment.  Incumbent conducts a training program for all assigned personnel on such subjects as proper performance of their duties, use of efficient work methods, customer service skills, and safety practices. Ensures proper work quality and quantity is accomplished. Conducts supervisory meetings on a regular basis. Fully supports and effectively contributes to the achievement of local EEO program and objectives.

 

KNOWLEDGE AND SKILLS REQUIRED: A minimum of four years of management experience. Experience in managing the administrative and operational elements of a F & B program, including staffing.  Knowledge of recreation operations.  Must be service oriented and able to carry out tasks independently.  This position requires a positive attitude and excellent communication skills, both orally and in writing in dealing with patrons, vendors and other MWR Staff.

Selection may be tentative pending the completion of the satisfactory employment reference checks and receipt of proof of education (where applicable).  SPOUSAL PREFERENCE: Spousal Preference can be used only once to gain regular full time employment in the commuting area but may be used multiple times for flexible type position.
